Waffles seem to be all the rage right now.  People are eating savory waffles, dessert waffles,  anytime-of-day waffles.  From waffle trucks to cute little waffle shops.   My husband did a bike ride over the weekend that was sponsored by a local waffle truck.   At the finish he ate a waffle with greek yogurt bananas, granola and honey.  Seriously.  Waffles are the new black.  Have you joined the craze? Do you stalk the waffle truck?

Every once and a while I crave waffles, usually for dinner . I like ’em slathered in peanut butter and drenched in syrup.  

But then I made these little mini waffle sundaes and my waffle world got turned upside down.  I think I’m about to join the craze and go find me that waffle truck. 


These mini whole wheat chocolate chip waffles (made with coconut oil too!) hot off the griddle are topped with a scoop of Yoplait Blueberry Frozen Greek Yogurt, topped with sliced bananas and nuts.   The cold yogurt hits the hot waffles and melts all over the top.  You totally want these for breakfast….or dinner or dessert or whatever.    

I did say the words mini, whole wheat, and frozen greek yogurt so feel free to eat as many as you want guilt free.

  1. 1 pint Yoplait® Greek Frozen Yogurt Blueberry
  2. 1 cup whole wheat flour
  3. 2 tsp baking powder
  4. ¼ cup coconut oil, melted
  5. 2 tsp granulated sugar
  6. pinch of salt
  7. ½ tsp vanilla extract
  8. ¾ cup + 2 tbsp skim milk
  9. ¼ cup mini semi-sweet chocolate chips
  10. ½ cup chopped pecans
  11. 1 large ripe banana, peeled and diced
  1. Preheat waffle iron to medium high heat.
  2. Stir flour, baking powder, and salt together and set aside. Beat egg, sugar, and melted coconut together. Stir dry ingredients into the wet ingredients.
  3. Pour 2 tablespoons of the batter onto the center of the waffle iron. Close and cook according to manufacture’s instruction.
  4. Cook waffles until golden, then top each waffle with two, cookie-size scoops of Yoplait Blueberry Frozen Yogurt. Top with a few slices of banana and a sprinkle of pecans. Enjoy!
  1. Feel free to use any variety of Yoplait Frozen Yogurt flavors.
  2. Cook waffles a little be longer for a crispier, more brown waffle.

Deborah and I have a thing for chopped salads–I can’t wait to try her Chinese Chopped Salad.  And Carrian, well, she made these Million Dollar Cookies! For that, I love her.

Baked Key Lime Pie Donuts from Taste and Tell  

We get together often to talk blogging, eat food (of course), let our kiddos play, and just to talk about life.   Blogging is what connected us, but I know even without our blogs, we’d be good friends! 

We got together last week and each brought a Key Lime Pie dessert to share and photograph.  Together we had seven little kiddos running (some crawling) around and begging for food so I’m surprised we even got some photos done before everything was eaten.

Making Key Lime Pie frozen yogurt was a given for me.   It’s hot.  Like 90 degrees hot.  Frozen treats are where it’s at right now and we love frozen yogurt!  

I knew the tart yogurt flavor would pair perfectly with the freshly squeezed, tart key lime juice.  I added some coconut milk to give it a touch of tropical flavor.  Topped with some lime zest and graham cracker crumbs this frozen yogurt is pretty much perfect.  And pretty much guilt free (it has Greek yogurt in it, so just play along!)

  1. 2 cups nonfat Greek vanilla yogurt (I use chobani)
  2. 1/2 cup lite coconut milk
  3. 2-3 key limes, juiced (add more to taste)
  4. 1/2 tsp lime zest,
  5. 2-3 tbsp agave nectar
  6. graham cracker crumbs for topping
  1. Combine Greek yogurt, coconut milk, lime juice, 1/2 tsp lime zest, agave nectar in a large bowl. Add more or less lime juice and agave to desired taste. Chill for 1-2 hours.
  2. Place yogurt mixture in the ice cream maker and prepare according to manufacturer's instructions.
  3. Serve with a sprinkle of graham cracker crumbs on top.
  4. Store in an airtight container in the freezer.
