Yield 18 cookies
1/2 cup coconut oil
1 cup brown sugar
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp baking soda
3/4 tsp baking powder
1 1/2 tsp cinnamon
pinch of salt
Preheat oven to 350. Line a baking sheet with parchment paper.
In a stand mixer, beat coconut oil and brown sugar together until creamy. Beat in vanilla and egg.
Add flour, baking soda, baking powder, cinnamon and salt to the bowl then mix in until combined.
Scoop with a cookie dough scoop onto baking sheet. Bake for 9 minutes or until just barely golden on the bottoms. Remove and let cool for several minutes before transferring to a cooling rack. *best if you underbake just slightly!
