Yield 16-18
1/3 cup pure maple syrup or high quality honey
1/4 cup baking cocoa
1/4 cup almond milk (or other choice of milk)
1/4 cup coconut oil
1/4 cup all natural peanut butter (or PBfit)
2 cups old fashioned oats
1 tsp vanilla
pinch of salt
In a medium saucepan melt together coconut oil, maple syrup and cocoa powder over medium heat. Stir in almond milk, vanilla and pinch of salt, and bring to a boil.
Let boil for one minute. Remove from heat and stir in peanut butter and oats.
Scoop by spoonful onto wax paper and refrigerate before eating (or until cookies are set).
Store in air-tight container in refrigerator.
