Whole Wheat Oat and Honey Pancakes

Yield 8-10 pancakes

Ingredients

Pancakes

1 cup whole wheat flour

3/4 tsp cinnamon

1 tbsp baking powder

pinch of salt

1 cup milk

1 egg

3 tbs high quality honey

1 tsp vanilla

1 cups oats

Honey-Butter Syrup

1/2 cup pure maple syrup

1 1/2 tbsp honey

1 1/2 tbs melted butter

Instructions

Mix all of the dry ingredients together, except the oats in a medium sized bowl.

In a separate bowl, whisk milk, egg, honey, and vanilla together until the honey is completely dissolved.

Form a well in the center of the dry ingredients and slowly pour the wet ingredients into the well. Gently whisk everything together until combined. Lastly stir in oats.

Heat a griddle with coconut oil or butter and heat to medium heat. Pour 1/4 cup pancake batter at a time onto the griddle and let cook for several minutes until the batter starts to bubble. Flip pancakes and let cook for another 2-3 minutes. Remove from heat.

Whisk the maple syrup, honey, and butter together to make the Honey-Butter Syrup.

Serve pancakes hot with fresh fruit, Honey Butter Syrup, plain syrup, or just honey! Enjoy!
