Strawberry Pistachio Green Cabbage Salad
Ingredients
10 oz shredded green cabbage (I used a pre-shredded bag from Trader Joe's)
1 1/2 cup sliced strawberries, stems removed
1/3 cup feta cheese
1 large avocado, sliced or diced
1/3 cup raw pistachio nuts
3 tbs extra virgin olive oil
2 tbs rice wine vinegar
2 tbs red wine vinegar
salt and pepper to taste
Instructions
whisk the olive oil, rice vinegar, red wine vinegar and salt + pepper together in a small bowl.
place the cabbage, strawberries, avocado, feta and pistachios in a large salad bowl. drizzle the vinaigrette over the salad and toss together. serve immediately.
*add more or less dressing as desired. the first time i made this salad, i just winged it with the dressing--adding a little of each until it tasted good. feel free to do the same :)
