White Chocolate Sprinkle Cookies

Yield 14



  1. Preheat oven to 350.
  2. In the bowl of a mixer, beat coconut oil and sugars together. Beat in egg and vanilla.
  3. In a separate bowl, mix flour, baking soda, cinnamon and salt together.
  4. Slow mix the dry ingredients into the wet ingredients.
  5. Gently fold the white chocolate chips and sprinkles into the batter.
  6. Scoop into one inch balls and place on a baking sheet lined with parchment paper.
  7. Bake for 8-9 minutes, remove and let cool for 2-3 minutes before transferring to a cooling rack.
