Easy Honey Baked Oatmeal

Ingredients

  • 1/2 cup coconut oil, melted
  • 1/3 cup organic honey (more or less for desired sweetness)
  • 2 eggs, room temp
  • 1 cup milk
  • 1 tbs baking powder
  • 1 tsp cinnamon
  • 3 cups organic oats (can be old fashioned, rolled oats, instant)
  • 1/4 tsp salt
  • 1 tbs chia seeds (optional)
  • 1 tbs hemp hearts (optional)

Instructions

  • Preheat oven to 350. Grease an 8X8 inch pan or round baking dish (similar in size)
    Whisk melted coconut oil and honey together. Whisk in eggs, then milk.
    Stir in baking powder, salt and cinnamon. Then fold in oats, chia seeds, and hemp hearts (if using).
    Pour into prepared baking dish. Refrigerate overnight for best result (can also be made morning of). Coconut oil may solidify but will be okay. Bake at 350 for 30 minutes or until slightly golden.
    Serve warm with fresh berries and a splash of milk or cream. Sweeten with more honey if needed!
