You know what makes these banana bars absolutely amazing? Two things.
1) Greek Yogurt
and
2) Melt-in-your-mouth Cream Cheese Frosting.
Yeah, I said Greek Yogurt. It’s the secret ingredient.
The yogurt makes these bars moist and dense, and almost creamy. Just like the addition of sour cream would do only better, I think.
If you’re like me and tell yourself these are “healthier” because they have Greek yogurt in them, then we can be friends and eat the entire pan together.
And since they have bananas and Greek yogurt in them, why don’t we start with breakfast?
Banana Bars
Ingredients
1/2 cup butter, soft
1 1/2 cups sugar
2 eggs
1 cup plain, nonfat Greek yogurt
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup mashed ripe bananas
Instructions
Preheat oven 350.
In a bowl, cream butter and sugar. Add eggs, Greek yogurt, and vanilla.
Combine flour, baking soda and salt in another bowl, then gradually add to the creamed mixture.
Stir in bananas. Spread into a greased 15 x 10 by 1 inch baking pan (big cake sheet pan). Bake at 350 for 20-25 minutes, or just until golden on top.
Let cool then frost with Cream Cheese Frosting
Cream Cheese Frosting
Ingredients
1 (8oz) pkg cream cheese, soft
1/2 cup butter, soft
2 tsp vanilla
3 3/4- 4 cups powdered sugar
Instructions
In a mixing bowl, beat cream cheese, butter and vanilla. Gradually beat in enough powdered sugar to achieve desired consistency.
Those are so pretty! I’ll take the whole pan.
SO yum. I love the idea of putting greek yogurt and/or sour cream in there. I bet these smell delish too!
I agree! They look awesome. We often do Greek Yogurt in place of butter or sour cream — and, I really like the texture and richness the yogurt creates. Yum.
Definitely would eat these with you for breakfast!
These sound awesome! Love this idea!
Bars are cooling, icing is in the mixing bowl now!
I hope you liked them!!
They were not good at all!!!!! No flavor at all……and i added extra bananas! These bars tasted like card board!
@Anonymous, I’m sorry they didn’t turn out. Mine didn’t taste like cardboard otherwise I wouldn’t have posted them!
Made these tonight and they turned out great. Tons of banana flavor and the frosting is delish.
These were a hit! So yummy!! I made them in a 9×13 and cooked for 10ish more minutes. Thank you for the recipe! It’s a keeper!
So glad!! Thanks Katy!
