That’ right, we are expecting baby number two and found out on Christmas Day it is another boy!! The little peanut will arrive mid-June!
I’m 15 weeks along and so thrilled to finally be out of the first trimester. It was a rough one. Some days just thinking about writing about food made me sick. I tried not to skip a beat here on the blog, but if I did, now you know why:)
Lucky for me, the nausea and vomiting disappeared and my appetite came back with vengeance just in time for Christmas and traveling, holiday treats, homemade meals, and all of the eating out that comes with it. I’m sure as heck going to be ready for a healthy start to the new year!
Making homemade meatballs can seem intimidating but they are actually really easy! You can make a bunch ahead of time and freeze them for future use too.

I went to a culinary school for a yr, an easy way to make uniform meatballs is to use an ice cream scoop. Press the meat into it with the heel of your hand and press the little lever and tada! Meatball. Sometimes it helps to oil it.
