Brett makes these Jelly Roll Pancakes for special occasion breakfasts at our house- a slow Saturday morning with no sports, Sunday breakfast before church, or for any of our kids birthdays (it’s always their request!) They are a Denney family favorite that my mother-in-law makes for us every time we visit too (usually around the holidays). The batter is basically a crepe batter, just slightly thicker and you cook them like you would cook normal pancakes. We serve them with butter and a little fresh jam or jelly rolled up in side, or a sprinkle of cinnamon and sugar. And always served with a little whipped cream.
For birthdays we’ll stack a few up on a make a little jelly roll pancake “cake” out of them!
Jelly Roll Pancakes
Ingredients
4 eggs
3 cups milk
1 tsp vanilla
3 cups flour
1/2 cups sugar
1/2 tsp salt
Instructions
Beat eggs with fork until well blended. Add milk and vanilla. Keep beating as you add the flour, sugar, and salt. Melt a little butter in a pan or large griddle, and cook as you would pancakes (about 1/4 cup batter per pancake).
Serve with butter, jelly, cinnamon and sugar, syrup, fresh fruit (and whatever toppings you like)
