I love simple meals. This is one is so good we ate it twice last week, and not because we had leftovers, but because we liked it that much.
Grab yourself some Jack’s Special Garden Fresh Gourmet Medium Salsa and some Flatout Flatbread (both can be found at Costco and both are favs at our house.)
Salsa Chicken & Flatout Salad Bowls
For the Chicken:
3-4 Frozen chicken breasts
2-3 c. Jack’s Special Garden Gourmet Medium Salsa or other favorite salsa
shredded cheese, avocado, & sour cream for garnishing.
Directions
Place chicken breasts in crock pot and cover with salsa (about 1/2-1 c. per breast).
Cook on high for 5-6 hours. Sprinkle with cheese just a few minutes before serving. Garnish with avocado and sour cream if desired.
For Salad Bowl:
1 Flatout flatbread (I use the healthy-grain ones-100 cals each.)
1 tsp canola oil (I use olive oil)
Directions
Preheat over to 375°F. Brush both sides of Flatout with oil. Lay Flatbread over inverted 3-4 inch diameter oven safe bowl or coffee mug. Press 4 sides (evenly spaced) into side of bowl. Place on baking sheet. Bake 8-10 minutes until Flatout begins to brown. Remove from oven. Let cool 15 minutes before inverting onto serving plate and filling with garden salad
