Simple and delicious, peanut butter granola with chocolate chunks- a peanut butter and chocolate lover’s dream and a perfect snack to have on hand!
I should have known this Peanut Butter Chocolate Chunk Granola wouldn’t last long at our house. I might have single-handedly eaten the entire batch in just about two days. I found every excuse to eat it–sprinkled in my morning protein shake (which is really good btw), snacking on handfuls here and there, sprinkled on top of ice cream or frozen yogurt, or just in a bowl with milk.
I seriously couldn’t stop. But I didn’t feel all that guilty, it’s made with coconut oil, honey, and peanut butter plus oats and chocolate chips. Kinda sorta healthy, right?!
Do you know the secrete to getting big, clusters of granola? Egg whites. Beat a couple of egg whites together and mix it into the granola just before you bake it. Then let it cool completely before you gently break it up and put it in a container.
I love big, chunky, clustery granola. It’s the best. Especially when you like to eat it by the handfuls 🙂
Now scurry off and make some granola!
- 1 1/2 cup rolled oats
- 1 1/2 cup steel cut oats ( or you can just use 3 cups rolled oats)
- 1 milk chocolate chips (or any variety chocolate chips)
- 2 tbs coconut oil
- 1/3 cup + 1 tbsp peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
- pinch of salt
- 2 egg whites
- Preheat oven to 325
- Place oats in a large bowl.
- In a medium saucepan, melt coconut oil and peanut butter together over medium-low heat. Add honey, salt and vanilla, stirring continuously. Remove from heat when everything is melted together, smooth and heated through.
- Pour peanut butter mixture over the oats. Stir to combine.
- Whisk two egg whites in a small bowl until frothy. Pour over the granola mix and stir to combine.
- Spread granola out in a single layer on a baking sheet lined with parchment.
- Bake at 325 for 15-20 minutes, stirring half way through.
- Granola should be golden. Remove from oven and let cool completely on the pan. Gently stir to break up. Mix in chocolate chips. Store in air-tight container.
- * the egg whites help make larger clusters of granola. try not to break up clusters when stirring.

I made this today but haven’t added the chocolate chips yet. This is amazing! So good! I sprinkled some cinnamon on it when I put it on the cookie sheet. This is definitely a keeper. Thanks for the recipe.
