Before I get too ahead of myself with fall recipes, I’ve still got three giant zucchinis I need to use up before they go bad. But I have no clue what to do with them.
I’ve already made zucchini bread. And zucchini cookies. I’ve sauteed it, roasted it, and made a pretty tasty zucchini pizza casserole. I’ve thrown it in omelets, and even made a zucchini & potato pizza (but that was eaten too quick for photos, so you never saw it!)
I chopped up two others and froze them for another day…in like November, and who knows what I’ll do with them then. So please, heeelpp. Tell me what to do with my leftover zucchini.
I’m actually down to two and a half now. I used up half of one to make this pasta dish.
If you were wondering…it was deelicious. It’s full of zucchini and mushrooms and Italian-style chicken sausage. It comes together in a jiffy and requires little work on your part. Some quick chopping is all, really. Heat the veggies and sausage together with your favorite pasta sauce, cook some noodles, and voila!

Your pasta looks hearty and comforting! I feel your pain with the zucchini – my garden is still growing them. I just posted a chocolate zucchini cake if you’re in the mood for more sweets.
