Cheers to the weeeeeeeekend! We are celebrating Brett’s birthday tomorrow (with protein balls!!, jk jk) and I’ve got a fun day planned for the birthday boy! But today, we are off to the beach with friends–just trying to soak up all the beach days we can before school starts in a couple of weeks.
Yesterday, however, we took the day to hang at home and get things done around the house. While Graham napped and the older boys watched a movie and worked on puzzles I whipped up these protein balls! I know I just shared these Peanut Butter Oatmeal Cookie Energy Bites a couple of weeks ago, and while somewhat similar, these Almond Butter Crunch Protein Balls are SOOO good (and packed with protein) I had to share them!
I added a little bit of Kind Oats & Honey Clusters with Toasted Coconut to add some crunch to these babies! You can use your favorite granola, I’d just recommend using for one that’s lower in sugar.
As I was shooting these Miles ran right over and immediately reached to grabbed one. Pretty sure he thought they were cookie dough balls…but now he’s obsessed with protein balls too, lol. That must mean they taste just as good as a ball of cookie dough 🙂
Don’t let his face fool you. He looks so sweet here, and definitely can be the sweetest thing in the world, but gosh he’s been a challenge lately. Bringing a few of these along with me to the beach today and hoping Miles doesn’t steal them all! Have a great weekend!
- 3/4 cup all natural almond butter
- 3/4 cup rolled oats
- 1/4 cup Kind Oat & Honey Clusters with Toasted Coconut.
- 1/3 cup raw honey
- 2 tsp vanilla extract
- 2 scoops vanilla whey protein powder
- Mix everything together in a medium bowl (i like to just use my hands to really mix it together well). Roll into one inch balls and store in the fridge.
