I got hit with the nastiest of head colds over the weekend. Complete with a sore throat, incredibly stuffy nose, and the feeling that my head might explode. Which is really no fun when you’re pregnant and can’t take any medication. Or hungry and can’t taste anything.
It didn’t hold me back from eating sushi with my parents who were in town for the weekend, or downing a few slices of pizza Saturday night, or eating these Banana Bread Ice Cream Sandwiches.
I’m pretty sure it all tasted amazing. Especially these….
My mother-in-law told me about the idea for Banana Bread Ice Cream Sandwiches she’d seen somewhere a while back. I was really excited to try it but just never got around to it. Isn’t it kind of a genius idea?
When my mom showed up with about five loaves of homemade banana bread, I immediately knew I had to try this. Next time you make banana bread, you have to give it a try to!
Let the ice cream soften a bit, then spread it onto a slice of banana bread.
Top it with another slice of bread, wrap it in saran wrap, and stick it back in the freezer until the ice cream is freezes again.
I tried to take pictures as fast I could before the ice cream melted, but you can see it started to get soft. I always love when ice cream sandwiches start to melt a little before you’re done eating it, so I didn’t mind so much.
Banana Bread Ice Cream Sandwiches
Banana Bread Ice Cream Sandwiches
Ingredients:
1 loaf banana bread {recipe below}
1 1/2 qt Vanilla ice cream, soft
Saran Wrap for wrapping
Instructions
Slice banana bread into even slices (as thick or thin as you’d like)
Place one scoop of softened vanilla ice cream on one slice and spread evenly to make a thick layer. Top with another slice of banana bread.
Wrap tightly in saran wrap and place in the freezer until frozen.
Easy Banana Bread
Ingredients:
1 stick butter, soft
1 1/2 c. white sugar
2 eggs
3 ripe bananas, mashed
2 c. flour
1/2 c. nuts or raisins (optional)
1 tsp baking soda dissolved in 4 tbsp Buttermilk
Instructions
Preheat oven to 350.
Beat butter until smooth. Add sugar, eggs, and bananas and mix until combined. Stir in flour, nuts or raisins (optional), and the baking soda-buttermilk mixture. Pour into a greased loaf pan and bake for 1 hour and 10 mins.
