My kids still haven’t adjusted to Daylights savings yet. Tell me I’m not alone here? Most mornings begin at 5:30am with at least one of them awake…and it’s painful. I always say I can handle anything after six am, but before that??? It’s just brutal. BRUTAL! And makes for a really long day. To think in my younger pre-kid years I was at the gym by five am is unimaginable now. Anyways….
Making a batch of warm banana muffins sure does help those early mornings, especially early weekend mornings! We made these Banana Maple muffins bright and early over the weekend and the entire batch was gone by noon. 12 muffins, five people. Gone by noon.
The ingredient list in these is short and they’re slightly healthier made with applesauce (instead of oil or butter) and sweetened with a little maple syrup and brown sugar. We all thought they were perfectly.
Here’s to surviving early mornings with the kiddos all winter long ????
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3 ripe bananas
- 1/4 maple syrup
- 1/4 cup brown sugar
- 1/2 cup applesauce
- 1 egg
- pinch salt
- Preaheat oven to 350. Lightly grease a muffin tin or line with cupcake liners. Set aside.
- In a medium bowl mash tthe bananas. Add maple syrup, brown sugar, applesauce and one egg. Whisk together.
- In another bowl whisk flour, baking soda, baking powder and salt together. Add to the wet mixture and stir unti just combined.
- Pour into the prepared muffin tin and bake at 350 for 18 minutes or until a toothpick inserted comes out clean!

Is it weird that I buy bananas with the intention of letting themrot so I can bake with them?! I’ll definitely be trying these out this week!!
