This salad is very similar to the Mexican Quinoa Salad I’ve posted before. I’ve had some quinoa for a while now that was just waiting to be used. I wanted to do something different with it, but I finally just through together a simple salad with what ingredients I had…..very few. Which basically means you have yet another quick, easy, and simple dish. That happens a lot around here.
Bell Pepper & Feta Quinoa Salad
Ingredients
1 cup quinoa
1 1/2 cup water
1 red bell pepper, chopped
1 green bell pepper, chopped
1 avocado, diced
1/2 cup crumbled feta cheese
juice of 1-2 limes
1 1/2 tbs Extra Virgin Olive Oil
Instructions
If needed, rinse quinoa in a strainer. In a medium pot bring water to boil. Stir in quinoa. Cover and cook for about 15 minutes until water is absorbed and quinoa is fluffy.
Pour quinoa in a medium bowl and fluff with a fork. Stir in chopped peppers, avocado, and feta cheese. Lastly stir in lime juice and EVOO.
Season with salt and pepper to taste, and serve. Serve warm or cold.
