My little guy turned one last week! One year has never gone by so fast. Does time kick into turbo once you have kids or what? Anyways, my husband’s parents made a last minute, quick trip to Utah so we celebrated Owen’s birthday a day early with them.
There’s been a lot of hype around this Best Chocolate Cake by Kevin and Amanda, so I decided this was the perfect occasion to give it a try. I made a mini cake for Owen and cupcakes for the rest of us.
These really might be the best chocolate cupcakes ever tasted.
You’d never guess they are made from a cake mix. Never, ever, ever.
And wait until you try the frosting. Or don’t wait. Go make it now. It’s light, fluffy, and creamy. I used almond extract instead of vanilla and it was, ummmm, amazing! I guess the secret to good frosting is using an entire stick of Crisco. Indulge if you will:)
Best Chocolate Cupcakes {or Cake}
Ingredients:
1 box devil’s food cake mix
1 package Jello instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs, beaten
1/2 cup milk
1 tsp vanilla
2 cups mini semisweet chocolate chips
Instructions
Preheat oven to 350 degrees F. In a VERY large bowl (4 qt), mix together everything except chocolate chips. Batter will be thick. Stir in the chocolate chips. Pour batter into cake pan of choice (I normally use two 9-inch pie pans). For cooking time, I use the cooking times on the back of the devil’s food cake box as a guide and usually add 10 mins to whatever it says. Then I do the toothpick check, and if it’s not done, I check on it every 5 mins after that. 🙂 It usually takes around 45 mins for two, 9-inch pie pans.
Buttercream Frosting:
1 cup shortening (crisco)
4 cups powdered sugar
1/4 tsp salt
1 tsp vanilla extract (I used almond extract)
1/3 cup heavy whipping cream
Instructions
In a mixing bowl, cream shortening until fluffy. Add sugar and continue creaming until well blended. Add salt, vanilla, and whipping cream. Blend on low speed until moistened. Beat at high speed until frosting is fluffy.

I made this for Brock’s birthday last year. I was a little freaked out by the Crisco in the shortening but if I didn’t know better I would have never known. It’s really good huh!

Came across your blog tonight and saw the “Best Cupcakes Ever” post. I kinda rolled my eyes because I was like, “uh, no…I make the best cupcakes”…only to read the recipe and it’s the one I use!! Ha!! These are my go-to cupcakes and everyone always raves about them. I use a chocolate frosting recipe though. 🙂

First of all, I have to say, I made these for my son’s 3rd birthday in July and everyone raved about how amazing they were. So thank you for that!! Second, I have a box of triple chocolate fudge cake mix in the pantry… Do you think I could substitute that for the devil’s food mix without a huge change in taste/texture?
