Happy Monday friends! I hope you had a great weekend! I wanted to pop in and share our very favorite protein pancakes with you to start the week. {And hopefully it won’t be too long before another blog post.}
These babies are awesome for breakfast, post-workout, or even an evening treat! Our kids even love them! My friend Beth shared the recipe with me over a year ago and it’s the one we keep coming back to! They’re made with a few simple ingredients and still have a fluffy pancake texture! Bonus- we make them with Vital Proteins Collagen peptides so we get all the benefits of collagen too!
And because it’s Monday, I’ve got a few super simple self-care/wellness goals I’m working on this week, including getting my daily serving of collagen!
Goals for the week:
Collagen, Sleep, Water.
#1. Daily serving of collagen peptides. Lately, I’ve only been getting 2-3 servings a week. I notice a big difference when I use it daily so I want to get back to that. I’ll share how I’m doing so on my Instagram stories. Starting with these pancakes! And did you know collagen can actually improve quality of sleep? SIGN ME UP! Which leads me to…..
#2. Sleep! I feel like I’ve been running on adrenaline for 2 months and am starting to hit “the wall.” I’ve never been great at napping when babies nap, or going to bed when they go to bed, but I can feel my body needing more sleep. We are working on a 7-8pm bedtime for the twins so my goal is to be in bed by 10pm this week. Brett will love this because he’s basically falling asleep on the couch at 9pm every night! And since I’m terrible at letting things wait until the morning- I’m giving myself permission, MAKING myself, let things that aren’t more important than sleep wait until the next day!
#3. DRINK ALL THE WATER. I was so good about drinking water right after delivering, and I was always so thirsty while breastfeeding. But slowly I got out of the habit so I’m consciously making the effort this week to drink my weight in ounces of water each day. I’ll be drinking out of this awesome tumbler. (Keeps your water ice cold for 24 hrs, has a straw, and fits in car cupholders. WIN!) Thanks to the girls at the Buy Guide for introducing me to it!
I started using Vital Proteins Collagen Peptides instead of other protein powders early on in my pregnancy with the twins (doctor approved). You can read all about why and the benefits of Vital Proteins in this post –but basically it’s an essential building block to our bodies’ bones, joints, skin, hair, and nails. I LOVE it. Brett even loves it- we put it in our smoothies, protein shakes, muffins, oatmeal, yogurt, waffles, pancakes!

Serve them with a drizzle of peanut butter, sliced fruit, maybe a little whipped cream (the coconut whipped cream from TJ’s is so good!) Promise you’ll love ’em.

The Very Best Protein Pancakes
Ingredients
1/2 cup kodiak cakes mix
1/2 banana, mashed
1/2 cup almond milk (or other liquid)
2 scoops Vital Proteins Collagen Peptides (or other protein powder if desired)'
1 egg
Instructions
Mash the banana in a medium bowl. Whisk in the egg, collagen peptides, milk, and kodiak cakes mix.
Heat a griddle to medium. Lightly grease and pour batter onto the griddle (make as big or as small as you want). Once they begin to bubble, flip over and let cook for another one-two minutes. Remove and stack on a plate.
Serve with all natural pb drizzle, whipped cream and fruit (if you want!)
*will make 10-12 mini or about 6 regular sized pancakes!
