My husband celebrated his 26th birthday on Friday. Around here though, we don’t just celebrate birth days we celebrate birth weeks. Really, it’s my husband’s idea. He just likes to try to get out of helping around the house, doing laundry, changing diapers, and basically getting anything he wants for a whole week. Birth week also means eating out too much, eating too much cake, and too much ice cream. For that reason, I’m happy it’s over.
By special request, I made Brett a Pina Colada Cake–just like the cupcakes I made a few weeks ago, only I used a Coconut Cream Cheese Frosting for it. He loved it. I thought it was pretty good….but like always, I had chocolate on the mind and had secretly been hoping he’d want a yummy chocolate cake.
Since we celebrated his birthday a day early (I threw a pretty fun surprise party for him) I figured since it was birth week and all I could make another one….even if it was more for me than him…I guess it was just a good excuse.
Let me just say, this chocolate cake was made for me. It’s thick and dense, loaded with chocolate, and very moist. It’s going down as an all-time favorite.
