We finally bought a jar of Biscoff spread to see what all the hype was about. Umm, it’s pretty amazing. And really rich. Lucky Owen gets to use it as an alternative to peanut butter on pb&j’s since he’s allergic to peanuts. Every day for lunch now he wants a cookie butter sandwich. Like a lot of people have, I wanted to make dessert with it.
I love fried ice cream and this no fry version with Biscoff flavor is great! Bonus points for not really being fried either!
Little balls of ice cream are rolled up in a mixture of crushed granola, cinnamon, sugar and Biscoff spread. It gives you the perfect bite of cookie-buttery crunch with creamy vanilla ice cream.
And don’t forget to top them off with chocolate sauce…
{No Fry} Biscoff Fried Ice Cream
Ingredients
1/2 gallon vanilla bean ice cream
1 1/4 cup granola (use food processor to crush)
1/4 cup Biscoff Spread or other Cookie Butter Spread
2 tbs sugar
1/4 tsp cinnamon
Chocolate Sauce
Instructions
Combine granola, sugar, cinnamon, and Biscoff Spread.
Scoop 1/4 cup ice cream and quickly roll into a ball. Roll in the Biscoff-granola mixture. (Press granola mixture around ice cream as you roll.
Place on wax paper and freeze ice cream balls until ready to serve.
Serve with chocolate sauce.
*instead of granola you can also use crushed graham crackers or corn flakes.

wow wow wow! Kristy, I’ve NEVER had fried ice cream before (I know…. have I lived?!) but I need to try it soon! These look so easy, too. And I love biscoff, you can’t do wrong!
