I was browsing magazines while waiting at a doctor’s appointment a couple of weeks ago and came upon these Black Bean Sloppy Joes. I pretty much love anything with black beans, and secretly love sloppy joes, so I couldn’t wait to give them a try.
I quickly made a note of the recipe on my phone while at the doctor’s. Look how ridiculously easy these are. I mean seriously. I didn’t even include instructions because it’s pretty much common sense. Dump it all in a pot, heat to a simmer, and voila. They are literally ready in 10 minutes. I need more meals like this on hand when the baby comes.
One way I save on groceries is to include one or two meatless meals each week. My husband isn’t too fond of the idea- he loves him some meat and protein- but I don’t mind one bit. At least with these sloppy joes the black beans are a decent source of protein.
And just like any other sloppy joe, they are messy. I love it!
Black Bean Sloppy Joes
Ingredients
1 (16 oz) can black beans, drained
1 (15 oz) jar of chunky salsa
1 tbsp brown sugar
1 tbsp Worcestershire
1 tbsp Dijon mustard
1 tbsp cumin
1 tsp salt
pepper to taste
Cheddar, provolone or Mozzarella cheese (sliced or shredded)
4 sandwich rolls, sliced in half
Instructions
Combine black beans, salsa, brown sugar, Worcestershire, Dijon mustard, cumin, salt and pepper in a medium pot and heat to a simmer.
Assemble sandwiches filling rolls with 1/3 cup black bean mix. Top with a slice of cheese or sprinkle of shredded cheese.
**Optional: Place sandwiches on a baking sheet, open faced with tops of buns facing up as well and broil for a few minutes to toast the rolls and melt cheese.

I found your blog while searching for this exact recipe.
Like you, I came across it while in my doctor’s waiting room last week. I scribbled the recipe down on the back of an old reciept and fixed it for dinner that night. My family loved them!
Alas, I must have tossed that receipt along with the recipe and we wanted to have this for dinner again tonight. So glad to have found it as I have no clue as to what magazine I got it from!
