Let me tell you a short little story about this bread. This bread, just bursting with blueberries, was created in one short afternoon. This bread, thick and hearty, and oh-so delicious was consumed in one short day.
I’d like to think it’s healthy (at least I’ve been telling myself it is!). It’s loaded with wheat flour, oats, applesauce, and a few other things. So one short run later, I don’t feel so bad about eating the entire loaf all. by. myself.
Well, I did have a little help from this shorty:) That makes me feel even better.

Healthy Blueberry Oatmeal Bread
Ingredients
1 cup whole wheat flour
1/4 cup all-purpose flour
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla extract
1/2 cup apple sauce
2 tbs low-fat milk
1 large egg, beaten with fork
2 medium egg whites, beaten with a fork
1 cup uncooked old fashioned oats
1 1/4 cup fresh blueberries
Topping:
3 tbs oats
1 tbs brown sugar
1 small handful blueberries
Instructions
Toss the topping ingredients in a small bowl and set aside.
Preheat oven to 350°F.
Grease and flour a loaf pan and set aside.
In a stand mixer, beat brown sugar, egg, egg whites, vanilla extract, applesauce and milk.
In a large bowl, stir together dry ingredients including the oats and cinnamon.
Add the wet ingredients to the dry ingredients and mix well. Batter will be fairly thick. Lastly, gently fold in blueberries.
Pour batter into prepared pan. Sprinkle the topping ingredients over the top. Bake at 350 for 35-45 minutes or until top of loaf is firm to touch. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.

Have you tried it with frozen blueberries? I have a 4 lb. bag of frozen wild blueberries in my freezer and would love to try this! But they are smaller so the 1 and 1/4 cup is probably too much…?

I made this bread several months ago and it was DELICIOUS. Huge hit at the office.
If I wanted to make muffins this time, how long should I bake them for? And still at 350?
Also, could I use quick oats if that’s all I have on hand?

Yes you can use quick oats! An I’d bake for 25ish minutes, but just watch it to make sure they don’t brown too much! And yes, still at 350!
