….Cupcakes, that is.
These “gourmet” cupcakes are too easy to make and oh so good. They are light and refreshing and you’ll feel like you could eat 10.
We spent this last weekend with our good friends in Logan, Utah. Between these cupcakes, Traci’s amazing Caramel Popcorn (I’ll have to post that another day), and Mel’s frog eye salad, I lost all self control.
Piña Colada Cupcakes
Ingredients:
1 box yellow cake mix
3 eggs
1 tsp coconut extract
1/2 c. buttermilk
1 small can crushed pineapple
1 recipe whipping cream
Instructions
Mix together cake mix, eggs, coconut extract, buttermilk and pineapple with juice. Pour batter into paper liners and fill 3/4 full. Bake at 350 degrees for 15-18 minutes or until cake springs back when lightly touched. Remove from pan and allow to cool on a wire rack.
Whipping Cream:
1 c. heavy whipping cream
3 tbsp sugar
1 tsp coconut extract
