I’m a sweet and salty kind of girl. So this browned butter quinoa salad makes me incredibly happy. Almost as happy as browned butter alone makes me. {Seriously, where has it been all my life?}
It’s sweet and salty and nutty and buttery. It has roasted sweet potatoes that are kind of sweet kind of salty, pecans that are all cinnamon-y, and quinoa that’s kind of nutty. And it all gets drenched in browned butter.
I’m not sure why I haven’ just drenched everything I eat in browned butter. Other than the fact my pant size would triple. But on occasion….
It’s so incredibly worth it.
Browned Butter Sweet Potato & Pecan Quinoa Salad
Ingredients
1 cup quinoa, rinsed
2 cups water
1 large sweet potato, peeled and diced (or two small)
1/3 cup chopped pecans
6 tablespoons of butter
dash of cinnamon
extra virgin olive oil
salt and pepper
Instructions
Preheat oven to 425
Toss diced sweet potatoes with olive oil and season with a dash of salt and pepper. Roast in the oven for 20-25 minutes or until pieces are browned and cooked through (crispy on the outsides, soft in the center). Stir half way through cooking. Once done, cover with foil and set aside.
While potatoes are roasting, place water and quinoa in a medium pot and bring to a boil. Once it boils, reduce heat, cover and let simmer for 15 minutes. Remove and let it set for 5 minutes.
Once quinoa is done cooking, place butter in a large saucepan over medium-high heat. Melt butter and stir occasionally until butter has turned a golden brown color (about 6 minutes).
Pour browned butter into a glass, bowl, or measuring cup with a spout and set aside. Reduce heat to medium and toss pecans into the same pan. Season with a dash of cinnamon and cook until slightly toasted.
Fluff the quinoa with a fork and pour it into a large bowl. Add sweet potatoes and pecans, then pour browned butter over the top and stir to coat evenly. Season with a dash of salt and pepper. Serve warm.
