I’ve got Red Velvet on the brain today and can hardly think straight long enough to tell you about these delicious Buffalo Chicken Cheese Bites. I’ve got so much of it sitting on my counter it’s consuming my every thought.
Just one more cookie. One teeeeny tiny slice of cake. Seriously, Kristy. Focus. Think cheese bites.
Your Super Bowl party this Sunday won’t be the same if these don’t make an appearance. The men, well, they will love you. What guy doesn’t like anything resembling the flavors of buffalo chicken wings?
And if you are like me, you will enjoy them just as much as the boys. In fact, I’ll probably be enjoying these more than game itself. Who do we have playing again?

This is definitely a keeper. I made a half recipe since it’s just the two of us. I used fat-free cream cheese, didn’t have bleu cheese on hand, and used panko breadcrumbs which made them extra-crisp! I also found that after 25 mins. they weren’t golden yet, so I switched to broil for about 4 mins. Perfect!
This will probably become a new Super Bowl tradition in our house, and I will proudly serve them at other parties, whether I’m hosting or not. Would love for it to eventually become known as “Mo’s Signature Appetizer”, and if folks ask for the recipe, I’ll always link back here of course.
