Have you guys heard of Zachos? Cause they’re a thing and they’re so flipping good! Zuchinni Nachos guys! Imagine all the zacho possibilities. Brett and I love all things buffalo wing flavored, so I went with Buffalo Chicken Zachos for our first go and they were so delicious.
And now I want all the zachos. I’m thinking BBQ Chicken Zachos (ooh with ranch!) Carnitas Steak Zachos. Straight up Cheese Zachos for kids. Gimme!
The secret is slicing them thick enough so they can hold all the toppings and not overcooking them so they don’t get too soft! Other than that, these are easy peasy and come together in minutes! Perfect for dinner or an appetizer.

Buffalo Chicken Zachos (Zuchinni Nachos)
Ingredients
2 large zuchinni, rinsed and sliced into 1/4" slices
2 tbs extra virgin olive oil
1/4 tsp chili powder
1/4 tsp garlic
dash of salt and pepper
12 oz. shredded chicken (I used canned chicken from costco)
1/4-1/2 cup Franks Red Hot Sauce (or buffalo wing sauce of choice)
1/4 cup blue cheese crumbles
2/3 cup shredded cheese
1/4 cup chopped celery
1 green onion, chopped
Instructions
Preheat oven to 425.
Toss the zuchinni slices with olive oil, chili powder, garlic and salt and pepper. Arrange close together in a single layer on a baking sheet (lined with parchment) and roast for 5 minutes in the oven. Remove.
In a medium bowl, toss the shredded chicken with the buffalo sauce (more or less sauce to your level of heat!).
Top the zuchinni slices with shredded cheese, chicken, celery, and blue cheese crumbles. Place back in the oven to cook for another 10 minutes or until the cheese is melted and bubbly.
Remove and top with green onion and additional buffalo sauce if desired. Enjoy!
