BLT’s were one of my dad’s go to when my mom didn’t have time to make dinner. In fact, I remember he’d cook the bacon, set out all the stuff and we’d do the rest. It’s got to be one of the easiest dinner options ever.
This California BLT is basically your typical BLT on steroids. But it’s still just as easy, and makes for an incredibly quick and satisfying meal. In fact, it might have been the best thing we ate last week.
I’m sure you can see why….
Here’s a look at what you’ll need: Kaiser rolls, provolone cheese, mayo, one lemon, one heirloom tomato, an avocado, lettuce, sprouts, and of course, bacon.
In a small bowl mix some mayo with freshly squeezed lemon juice. Then cook your bacon ’til it’s nice and crispy and set aside. If you’re looking for a lighter option, use light mayo and turkey bacon. I used Turkey Bacon and regular mayo because it’s what we had.
Just as the bacon is finishing up, slice the Kaiser rolls in half, place them on a baking sheet with a slice of provolone cheese on each of the top halves of the rolls, and broil for about 30 seconds.
Then, it’s all about assembly….however you want to do it. Pile on the lettuce, tomato, avocado, sprouts, and of course, bacon.
In the end you’ve got one monster of a sandwich to wrap your mouth around!
California BLT Sandwich
Ingredients
2 whole wheat Kaiser rolls (or your choice of bread)
4-6 slices thick-cut bacon or turkey bacon
1 ripe avocado, pitted and thinly sliced
1 heirloom tomato, sliced
2 slices provolone cheese
4 tbs regular or light mayonnaise
1/2 lemon, juiced (swirl into mayo before assembling)
butter lettuce leafs (2-3)
sprouts
salt & pepper
Instructions
In a small bowl mix 4 tbsp mayo and juice of 1/2 a lemon. Set aside.
. Preheat your oven or toaster oven on broil.
Cook bacon and set aside.
Slice Kaiser rolls in half and place the cut-side-up on a sheet pan. Place a slice of provolone cheese on each of the “top” halves of the rolls. Broil the bread for 30 seconds or until the cheese has melted.
Remove bread from the broiler and spread the lemon-mayo on each of the bottom halves of the rolls. Then begin to layer the remaining ingredients: tomatoes, avocados, lettuce, sprouts, bacon. (You can assemble in any order) I used two slices of bacon and two slices of tomato for each sandwich. Sprinkle a pinch of salt and pepper onto of the veggies. Cap the sandwich with the top and enjoy.
