Brett and I have been on a Caprese Salad kick lately. It accompanied dinner almost every night last week. But one day for lunch I decided to turn that salad into a hot and melty, grilled cheese sandwich. Best idea ever.
I’m a stay at home mom so I eat lunch at home almost every day. I typically eat the same things- sandwiches and salads. This sandwich is kinda gourmet but it’s really simple– just my kind of lunch and mixes things up a bit.
This Balsamic Basil Mayo ( I used light mayo) really gives the sandwich extra flavor. Just mix some mayo, freshly chopped basil, and balsamic vinegar together and you’ve got an awesome spread. The rest is as simple as making your typical grilled cheese.
And because I really like balsamic vinegar, I had a little side of it for dipping. Mmm-mmm good!
Caprese Grilled Cheese Sandwich with Balsamic Basil Mayo
Ingredients
2 slices whole grain bread
2 slices fresh mozzarella cheese
2-3 tomato slices
1 tbsp butter, soft
1 1/2 tbsp light mayo
1/4 tsp freshly chopped basil
1/2 tsp balsamic vinegar
Instructions
Preheat griddle or stove top pan to medium-low to medium heat.
In a small bowl, combine mayo, basil and balsamic vinegar. (Add more or less basil or balsamic vinegar to your taste).
Evenly spread butter on one side of a slice of bread. Place this side down on the griddle or pan. Quickly spread the balsamic mayo on the side of the bread facing up, then quickly assemble your sandwich with the mozarella and tomatoes. Sprinkle with a dash of salt and pepper.
Evenly spread butter on one side of the other slice of bread. Place on top of the sandwich with the buttered side up.
Cook for about 3 minutes on each side, until cheese is melted and bread is golden brown.

I just made this and it’s delicious! I already knew that mayo gave grilled cheese an extra creamy kick, but adding the vinegar was just the perfect touch.
