I really want to tell you this cauliflower mac and cheese is healthy…because, you know, it has cauliflower in it. But all the cheddar cheese, cream cheese, milk, sour cream…and then some more cheese that went into it, kind of ruined any chance it had of being healthy.
So….sorry about that.
But let me just tell you, it’s worth it!
It’s a great way to sneak in veggies for the kiddos too {and any stubborn adults that don’t like veggies}. My 19 month old chowed it down just like he does the good ol’ Kraft Mac n Cheese. In fact he probably had a little too much. I learned even a little bit of cauliflower can take a toll on a toddler’s young tummy. The next day was a rough one. Uhh..oops…first time mom here:)
The original recipe didn’t call for any pasta noodles, but the consistency seemed a little too soupy so I decided to add just a little, about 1/2 cup of cooked whole wheat macaroni noodles. After baking, it was perfect!
