Hey ho Monday!! We’re pretty stoked to be partnering with Horizon Organic over the next couple of months because we LOVE their products so dang much! The boys have kind of become Horizon Organic milk snobs (Brett included). It’s their favorite! I love the products too, believe me, but I love that they champion organic, healthy foods that can be soul-nurturing, wholesome and adventurous experiences for kids and the whole family.
Mac & Cheese please!! I ramped up Horizon’s Mac & Cheese simply by adding some roasted Cauliflower, a little greek yogurt, and extra cheese to turn it into this Cauliflower Mac & Cheese Bake that the boys devoured (and hardly noticed the cauliflower–the key is to chop it into small pieces)
We’ve done this with the Mild Cheddar Mac & Cheese and the White Cheddar Shells & Cheese…..you can’t go wrong with either. Creamy, so cheesy, and good! I like using the Protein Mild Cheddar Mac too, it has 12 grams of protein per serving!
My boys won’t eat roasted or cooked cauliflower on its own, so the fact that they liked this says something. It’s such an easy way to sneak your veggies in their food. And I love that Horizon Mac n Cheese is made with real, quality organic ingredients!

Roasted Cauliflower Mac n Cheese
Ingredients
1 box Horizon Mac n Cheese (mild cheddar, white cheddar)
(butter, milk called for on mac n cheese box)
1 head cauliflower, chopped into small pieces
1/3 cup greek yogurt
2 tbs Horizon Organic Milk
1/2 cup shredded cheese
3-4 tbs extra virgin olive oil
1 tsp garlic salt
1/4 tsp salt
1/4 tsp pepper
Instructions
Preheat oven to 400.
Place chopped cauliflower in a bowl, drizzle olive oil over the top, add garlic, salt + pepper and toss to coat. Spread out on a baking sheet lined with parchment. Bake for 20-25 minutes or until the cauliflower is fork-tender. Remove and set aside.
Prep the Mac n cheese according to the directions on the box. Remove the pan from the heat. Add cauliflower to the mac n cheese. Stir in greek yogurt, 1/4 cup of shredded cheese and another 2 tbsp milk.
Spread cauli mac n cheese into an 8X8" casserole pan. Sprinkle remaining cheese over the top. Cover with foil, bake for 10 minutes at 350 until cheese is melted over the top.
