This is another recipe of my mother-in-laws. She made it for brunch on Sunday while my parents and Brett and I were there. She says it’s great company food, because it’s so easy to throw together, and much easier than making individual omelets or an enormous batch of scrambled eggs. I say it’s great any-day food; it’s so good I’d eat it any day for breakfast, brunch, heck even dinner.
The top of the egg bake has this amazing buttery crispness to it.
The combination of monterey jack and cottage cheese make it thick and creamy, and the green chiles give it just the spice it needs. You can serve it with salsa as well.
Chile Cheese Egg Bake
Ingredients
10 eggs
1/2 c flour
1 tsp baking powder
1 1/4 tsp salt
16 oz. cottage cheese
4 c shredded monterey jack cheese
1/2 stick butter (1/4 c), cubed
2 (4.5 oz) cans diced green chile (if you want it spicier, toss in some jalapeno)
Instructions
Whisk the eggs and salt together in a large bowl. Add the cheeses and butter. Whisk in the flour and baking powder into the cheese mixture. Lastly, stir in green chiles. Pour into a greased 9 X 13 in. baking pan.
Bake for 10 mins at 400 degrees. Reduce heat to 350 and cook for another 25-30 minutes (or until knife or tooth pick comes out clean).

I would like to make this but have a couple of questions. Is it 1 Tablespoon or 1 teaspoon of baking powder? The recipe says 1 1/1 tsp. salt. Is it supposed to be 1 1/2 or 1 1/4? Thank you. Love your blog.
