I thought I’d share these quick and easy Chocolate Cheesecake Bars before we take off for Lake Powell. I’ll be gone for a week!
These are very similar to my Carrot Cake Cheesecake Bars, I just used a chocolate cake mix rather than a carrot cake mix. And they are topped with semi-sweet chocolate shavings instead of a dollop of cream cheese frosting. However, if you are looking for a really rich treat, go with a chocolate frosting on these. Heavenly! If you want to keep it simple and not too rich, stick with the chocolate shavings.
Chocolate Cheesecake Bars
Ingredients:
1 box Chocolate Cake Mix
1 egg
1 stick butter, soft
2 oz. semi sweet chocolate bar
Instructions
Preheat oven to 350 degrees
Beat the cake mix, egg, and butter until it turns into a thick dough. Press dough into a greased 9 x 13 inch pan. Set aside while you make the cheesecake layer.
Cheesecake layer
16 oz. cream cheese, soft
1/2 cup sugar
2 eggs
1 tsp vanilla
Instructions
In a medium sized bowl beat the cream cheese until smooth. Add sugar, eggs, and vanilla and continue beating until creamy and smooth.
Pour the cheesecake layer over the chocolate bar in the pan. Bake for 30-40 minutes or until the edges start to pull away from the pan. Let cool completely.
Once cooled, top with semi-sweet chocolate shavings. Cut into squares and serve.

Sorry – but I think this should read — chocolate layer instead chocolate bar.
Shave chocolate bar for topping should also be added.
