I’m having a slightly hard time being productive while waiting for these babes to arrive! Last week I was on top of meal planning and this week I’m winging it! Dinners have been lacking, but I did whip up this tasty, healthier treat for Valentine’s Day next week- this Chocolate Covered Strawberry Smoothie! Just like the classic V-day treat we all love, but drinkable and healthy!
It’s made with simple ingredients- coconut milk, frozen strawberries, cocoa powder, a little honey, flax, and chia seeds. I always love to add some Vital Proteins Collagen Peptides to my smoothies, so added the plain unflavored peptides to this! The collagen peptides help make it sooo creamy and smooth!
Ohhhh, and a little dash of cocoa + a splash of cream on top (coconut cream or whipping cream) is a nice little touch too!
I don’t go too crazy for Valentine’s Day at our house, so I’m thinking I’ll make some simple heart shaped Kodiak cakes pancakes with this smoothie too! Unlesss of course I’m in the hospital having babies (which I wouldn’t be opposed to either!)

Chocolate Covered Strawberry Smoothie
Yield 2
Ingredients
8 oz unsweetened coconut or almond milk
1 1/2 cups frozen strawberries
1 1/2 tbsp cocoa powder
1 tbs chia seeds
1 tbs flax seed
1 tbsp honey
2 scoops unflavored collagen peptides
*optional coconut cream or heavy cream
Instructions
Place everything in a powerful blender and blend until smooth and creamy! Pour into two glasses and serve! Option to drizzle cream on top!
