My friend Kelsey brought this Cilantro Slaw to a church get together a few weeks ago. She served it with BBQ pulled pork sandwiches and it was seriously, so, so good. I’ve never really been a big fan of coleslaw, or cabbage for that matter, but I couldn’t get over how good this was. I found myself getting seconds of just the slaw.
I pretty much love anything with cilantro in it though, which is exactly why I love this stuff.
It’s pretty much just thinly sliced cabbage and lots of chopped cilantro. With a super simple creamy sauce made of sour cream + vinegar + water + salt & pepper. And I added a squeeze of fresh lime too.
That’s it! Just pour the sauce over the cabbage and cilantro, toss it together and let it chill for a bit.
I definitely recommend putting it on pulled pork sandwiches but I can’t wait to try it on salads and every Mexican dish I make. Enchiladas, taco salads, tacos, nachos….oh yes, nachos!! And of course, you can always eat it by itself, with a spoon, like a classic side of coleslaw.
- 1/2 head of cabbage, sliced thin
- 1/2 cup chopped cilantro
- 1/2 cup sour cream
- 2 tbsp white vinegar
- 1 tbsp water
- 1/2 tsp salt
- 1/2 tsp pepper
- squeeze of fresh lime (optional)
- In a medium bowl whisk together sour cream, vinegar, water, salt, pepper, and lime juice. Set aside. In another bowl combine sliced cabbage and cilantro. Pour sauce over the cabbage mixture and toss until evenly coated. Chill for 30 minutes.

I LOVE coleslaw and cilantro is my favorite herb! So basically this sounds like a perfect recipe for me! 🙂
