I’m not really a plan-ahead blogger- I never have my posts scheduled out weeks in advance. I just kind of wing-it, go with my mood and what I’ve been making that week. What you see is what has most recently been baked-up, cooked-up, and eaten-up here at our house:)
But lately I’ve been making cookies like crazy. So many good cookies that I just don’t which to share first. Brett came home yesterday to Christmas music blaring and some very Christmas-y cookies fresh out of the oven….just think peppermint and chocolate and marshmallows!! I really wanted to share them with you today because they were pretty fantastic and I’m totally in the Christmas mood over here. But I’ve had these Cinnamon Chip Pumpkin Oatmeal Cookies ready to share for over a week now.
So before I get all Christmas-y on you, let’s talk about these beauties. Because I tend to get over my pumpkin fetish as soon as Thanksgiving is over- and that’s just over a week away. So let me get it out of my system.
The only thing better than pumpkin cookies loaded with chocolate chip are pumpkin cookies loaded with cinnamon chips. And oats. Big, soft, pumpkin oatmeal cookies with cinnamon chips in every bite.
After seeing Katie’s cinnamon chip scones, I knew I had to get my hands on some cinnamon chips and get baking.
Just wait until you sink your teeth into one of these!
Cinnamon Chip Pumpkin Oatmeal Cookies
Ingredients
3/4 c butter, soft
1 c sugar
1/4 c brown sugar
1/2 tsp vanilla
1 c canned pumpkin
1 egg, beaten
1 1/2 c flour
1 3/4 c rolled oats
1/2 tsp baking soda
1/4 tsp nutmeg
1/2 tsp cinnamon
1 tsp salt
1 1/2 c cinnamon chips
Instructions
Preheat oven to 350 and line cookie sheets with parchment paper.
Beat butter and sugars together until creamy. Beat in egg, then vanilla and pumpkin.
In another bowl combine flour, oats, soda, nutmeg, cinnamon and salt.
Gradually add dry ingredients to wet ingredients, stirring with a wooden spoon. Stir in cinnamon chips.
Drop heaping spoonfuls onto prepared cookie sheets and bake for 12-13 minutes or until edges are slightly golden. Let cool for a minute or two then transfer to a cooling rack.

Kristy, these cookies look like pure perfection. I am completely smitten with pumpkin cookies these days – i’ve made three different kinds in the past 3 weeks! I’ve only baked with those cinnamon chips a handful of times, but I am willing to bet these cookies would blow any of those recipes out of the water. I’m pinning them – I could not resist these!

These are perfect! Oatmeal cookies are my favorite and adding pumpkin and cinnamon, two of my favorite flavors, would make these pretty much irresistible!
I made these on Wednesday and they were UNBELIEVABLE!!! Doubled the batch and used two full bags of cinnamon chips! They were a hit for thanksgiving! Thanks for sharing so many awesome recipes!!

I just wanted to let you know that I tried these out on Saturday and brought them to a party. I thought they were absolutely amazing both right out of the oven, and after cooling. They stayed so moist and chewy. I took them to a Fall Harvest Party, and they were voted “best food item,” against many other excellent fall themed treats. So it seemed like everyone else liked them too. I am going to make them again this weekend for a friend’s birthday party. So thanks again for the awesome recipe!!!

Where did you buy cinnamon chips from?! I can’t find them anywhere!
I found them at our local grocery store, but I would think Wal Mart would have them!
I almost gave up looking for these and going with Amazon. On my 6th and final attempt at finding them, I was able to. I live in Virginia Beach and the only place that not only had them but actually knew what they were, was a store called Farm Fresh. A little bit of a higher end grocery store.
I would like to know where to buy cinnamon chips. I looked in a couple grocery stores, but could not find them
