I used to douse grapefruit in sugar when I was younger. Half way through eating it, the sugar would have dissolved so I’d cover it with more. That was the only way I liked it. I like to think my taste buds have matured since then (and knowing that dousing things in sugar just isn’t good for me). I’ve come to enjoy the tart and tangy flavor of grapefruit by itself, and I’ve even paired it with salads. Sign of maturity, no?
This salad was inspired by the giant bag of grapefruit I bought from Costco last week. I was determined not to let any go to waste. I kind of just tossed together what I had on hand, so I’m not sure I can call it a recipe. You can add whatever variations to it you want.
I only used half of a grapefruit for the salad and decided to make a Grapefruit Vinaigrette for the dressing. It’s not a strong citrus-flavored dressing, its light and brings the flavors of the together well. You only need a drizzle.
Citrus Salad with Grapefruit Vinegairette
For the Citrus Salad:
1 heaping handful fresh field greens and spinach, combined
1 nectarines, peeled and parted
1/2 grapefruit, peeled, parted, and cut into chunks
dried cranberries for sprinkling
choice of nut for sprinkling (I used sunflower seeds because it’s what I had)
Parmesan cheese for sprinkling
For the Grapefruit Vinaigrette:
1/4 cup freshly squeezed grapefruit juice
3 teaspoons fresh lime juice
1/4 tsp ginger
1 Tbs extra virgin olive oil
1 tsp red wine vinegar
dash of salt & pepper
Instructions
Toss everything in salad together. Drizzle with vinaigrette and serve!

SO this looks really yummy. Plus I love grapefruit, so even better! I used to put sugar on my grapefruit also, but now I like to put a little salt on it instead. It sounds super gross, but it really brings out the flavor! I LOVE it!

That looks so fresh and delish. I was laughing as I read this because I totally used to cover my grapefruit in a pound of sugar, as well as my rice crispies, and my rice chex….oops. Can’t wait to try this!
