Aaaaand we’re back! Seven days of traveling with two little kiddos is exhausting. I think Brett and I need a vacation from our vacation. I plan to ignore the piles of laundry on my floor and empty fridge starting at me for as long as possible. Which will be for about twenty minutes. I hate looking at dirty laundry.
After a week of eating out, too many orders of loaded nachos, and a whole lot of diet coke (not to mention an entire summer of eating ice cream and treats) my diet could definitely use some cleaning up. But you know me, I don’t like to give up my sweets! So if cleaning eating can include chocolate, I’m all in!
My friend Whitney shared this recipe with me–she’s got all sorts of healthy recipes up her sleeve. I wasn’t sure how they would taste being sweetened with stevia but I was pleasantly surprised. Brett and I both loved them. Not to be compared with the giant chocolate chunk muffins from Costco, because they definitely don’t taste the same. But for a clean and guilt-free treat, they’re perfect.
They’re super moist and rich with chunks of chocolate!
- 1 3/4 cup oats
- 3 egg whites
- 3/4 cup unsweetened cocoa
- 3/4 cup unsweetened applesauce
- 1 tsp vanilla
- 1/2 cup nonfat plain yogurt or plain greek yogurt
- 2 tsp vinegar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup hot water
- 1/2 cup baking stevia or other sweetener that measures like sugar
- 1/2 cup semisweet or milk chocolate chips
- Preheat oven to 350. Line a muffin pan with liners and set aside.
- Place all ingredients aside from chocolate chips in a blender or food processor. Blend until smooth (making sure oats are ground up).
- Pour mixture into a bowl and stir in half of the chocolate chips in. Set aside the remaining chocolate chips. Fill muffin tins 3/4 full.
- Bake for 10 minutes, remove from the oven and sprinkle remaining chocolate chips over the top of muffins. Place back in the oven to finish baking another 2-5 minutes or until a toothpick inserted comes out clean.
- Remove from oven and let cool!

I just made these and they are kind of rubbery. What was the texture of yours?i’m assuming they are not super cakey, but just wanted to find out from you. I think mine needed to bake a little longer, also. They tested done, but then sank once they were out.
