Are you guys sick of me saying how much I love coconut oil? Because I’m gonna say it again. I really do kind of love it. Not only did I use it on this super easy and delicious three ingredient Coconut Lime Salmon but I made more cookies with it yesterday (I know, more cookies?). Unfortunately the stuff’s not cheap and I’m burning through it like there’s no tomorrow. Sigh. There goes that grocery budget I was trying to stick to.
And salmon’s not too cheap either. We don’t buy it a lot, but every once and and a while we splurge and buy a bag of frozen filets from Costco. Their pre-packaged filets make them really easy to work with. We don’t typically do much to salmon, other than drizzle it with a little olive oil and season it with salt and pepper. But I’m tellin’ ya, a little coconut oil makes it melt-in-your-mouth good, and the fresh-squeezed lime juice adds a pop of fresh, tangy flavor. Three ingredients to fancy my friends.
And the flaked coconut on top, it’s optional. So if you want to add it (which I recommend) it’s four ingredients to fancy. Still pretty awesome.
- 2 salmon filets, thawed
- 1 1/2 tbsp coconut oil, melted
- juice of 1/2 lime
- 1 tbsp flaked coconut, sweetened (optional)
- salt & pepper to taste
- Preheat oven to 425.
- In a small bowl combine melted coconut oil and lime juice. Brush mixture all over salmon filets and place in a baking dish. Season with salt and pepper. Bake for 20-25 minutes, or until cooked through.
- Remove from oven, and sprinkle filets with flaked coconut. Set oven to broil. Place back in the oven for 1-2 minutes or until coconut is golden.
