I’m a little bit obsessed with this granola. It’s perfectly sweet and nutty, made with natural ingredients, and it’s packed with protein. When I’m not just munching on it as a snack, I’m making these awesome yogurt parfaits {keep scrolling down}.
I kept this recipe really simple, not a lot of mix-ins, but you can totally get creative with it. Some dried fruit would be great (cranberries would be my first pick!) but I left them out so I could sprinkle it in yogurt. I don’t like dried fruit in yogurt…it has to be fresh. But that’s just me.
Oh hello beautiful! This is that parfait I was talking about. Breakfast? Lunch? Dessert? It’s totally justifiable any time of day.
And my favorite way to build it….
Chobani Blueberry Greek Yogurt — Coconut Pecan Quinoa Granola — Sliced Banans — then Repeat! Fill your cup/bowl/jar to the brim.
- 1 cup quinoa, cooked
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/2 cup flaked coconut
- 1/4 tsp cinnamon
- 3 tbsp coconut oil, melted
- 4 tbsp honey or agave nectar
- 1 tsp vanilla extract
- Preheat oven to 350.
- In a large bowl combine quinoa, oats, pecans, coconut, and cinnamon.
- In another bowl whisk together coconut oil (melted), honey or agave nectar, and vanilla extract.
- Pour wet ingredients over dry ingredients and stir until evenly distributed. Spread on to a baking sheet lined with parchment or foil and bake for 20-30 minutes (or until golden), stirring once half way through.

Agreed-only fresh fruit with yogurt! This granola looks amazing – I love the unique combinations of flavors and textures. I like the simplicity as well … I haven’t made many granola and definitely not with quinoa but I am pinning this into my “to-do” board!

I LOVE homemade granola! And coconut, and blueberry Greek yogurt. I want all of it right now. Also, the pictures are goooorrrggeeooouuusss. The lighting is perfect, and I love the granola falling into the cracks in the wood. Soooo pretty!

It does get crunchy! I store it in an air tight container in fridge or pantry.
