Cranberry Apple Pecan Feta Dip

I can’t believe 2014 is coming to an end.  The last six months of this year brought big change for us.  It’s been a whirlwind.  Like, what just happened!!?? We moved our little family from Utah to California with three weeks notice…lived in a hotel for two weeks…..started a new life in a new state…cried some….(did I mention I was pregnant?)…traveled some….went to the beach a lot (best part!)… I had a baby (okay this was the very best part!)…and then life just got real crazy.  Those are about all the details I remember 🙂

I know life will feel just as crazy in 2015, because life with three under the age of five is just crazy.  Or maybe it’s just the toddler I have in the middle that really makes it crazy.  Nonetheless, I’m looking forward to 2015 and whatever it might bring for my crazy little crew. Have I used the word crazy enough yet?

If you’re like me and you’re all about the dips and appetizers at any party, then you’ll love this Cranberry Apple Pecan Feta Dip.  It’s perfect for New Year’s Eve.  It’s sweet and nutty, yet salty and tangy.  And it’s addicting! It’s got everything you hear in it, dried cranberries, chopped apple, pecans, feta cheese and a little honey, cinnamon and brown sugar to sweeten it up.   It’s great served cold but you can warm it in the oven too.

Set this out with some crispy crackers or pita chips and it’ll vanish!

Ingredients

1. 6 oz crumbled feta
2. 3/4 cup chopped apple
3. 1/4 cup chopped pecans
4. 1/4 cup dried cranberries
5. 2 tbs honey
6. 2 tsp milk
7. 1 1/2 tbsp brown sugar
8. 3/4 tsp cinnamon

Instructions

1. Mix feta cheese, apple, cranberries and pecans together in a medium bowl. Stir in brown sugar and cinnamon. Drizzle with honey and pour in milk and gently stir everything together until mixed well. Serve cold or warmed in the oven. Enjoy with crackers or pita chips!
