I’m kind of obsessed with chopped kale salads right now. So much that I’ve got two giant bags of chopped kale in my fridge. GIMME ALL THE KALE! They’re my new go to for lunch, and this Chopped Apple, Kale and Shaved Brussels Salad is currently my favorite. It’s crunchy, loaded with yummy toppings, and made with a super simple, sweet vinaigrette dressing too.

Apples, pecans, and golden raisins tossed together with kale and shaved brussels sprouts. The shaved brussels are raw (try ’em if you haven’t) and add even extra crunch to this salad!
Make this yummy salas and eat yo’ crunchy greens friends!!
- 1 1/2 cups chopped kale
- 1 1/2 cups shaved brussel sprouts, raw
- 1 cup chopped apple
- 1/2 cup chopped pecans
- 1/3 cup golden raisins
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 1/2 tbsp honey
- 1 tsp dried minced onion
- 1/4 tsp salt
- 1/4 tsp pepper
