I’m on the road today. We’re heading to Aspen, Colorado for the weekend to attend a wedding. I’ve never actually been to Aspen so I’m a teensy bit excited to spend some time there….and maybe see a celebrity or two vacationing there as well.
Hopefully, I’ve got my nose in the book The Help because I’ve been wanting to read it for months now, and just haven’t made the time. A six hour car ride ought to do the trick. Then maybe I can go see the movie, finally. However, there’s a really good chance I’m desperately trying to entertain the little man in the back and haven’t even opened the book yet.
Anyways, I just wanted to leave you with this quick and unbelievably simple recipe for Pumpkin Chocolate Chip Bars.
It’s a recipe I think everyone and their mama’ already has (at least I hope so).
Just like the cookies but bigger and thicker, which basically means better.

Are these a bit healthier since you don’t add the eggs/oil that you normally do in a cake? Do you know the calorie count?
