My little Miles is getting tubes in his ears this morning. For the last six months he has had ear infection after infection. We’ve been to the doctor’s over and over, he’s been on antibiotic after antibiotic and nothing has worked. The dang ear infection kept coming back. He went from being my happiest little guy to Mr. Grumpy, and he hasn’t slept good at night in months (another reason he has been grumpy–and so have I). Just kidding. I’ve just felt so bad for the little guy.
He hasn’t been a good eater either, but every once and a while I make something he’ll actually eat, he likes it, and eats it like he’s never eaten before.
Like this soup. He couldn’t get enough.
Creamy Tomato Soup made in five minutes (maybe even less)!!
The other day while making them grilled cheese sandwiches, I got the craving for one too, with a bowl of tomato soup. Maybe it’s nostalgic for me, maybe it’s the pregnancy, but there’s something so comforting about dipping a hot grilled cheese sandwich in a warm bowl of plain old tomato soup. It was like my favorite thing to eat as a kid! And I need it.
I didn’t have a can of Campbell’s tomato soup so I took a can of diced tomatoes, added some milk , basil, garlic and salt and pepper blended it all up! It was perfect! My kids had never even had a grilled cheese with tomato soup (I was depriving them of my childhood favorite!). I wash shocked how much they liked it, and dipping their sandwiches in it of course. Miles liked the soup so much I had to make a second batch. He kept saying “mo soup, mo soup.” You got it dude.
It’s the easiest soup you’ll make, ever! Enjoy!
- 1 (14 oz) can diced tomatoes (Italian Style diced tomatoes are good too!)
- 1/2 cup whole or 2% milk
- 1/2 tbsp minced basil or basil paste
- 1/4 tsp garlic salt
- salt and pepper to taste
- Place everything in a blender and blend until smooth. Pour into a medium saucepan and heat over medium heat to warm soup.
- *If your blender has a soup setting you can set it the soup setting and blend until ready. It should be nice and warm too!

I hear what you are saying about ear infections. You have two solutions. You can have thevdoctor put tunes in his ears or, hAve his tonsils and avoids removed. Both require surgery and both will resolve his ear infection problem.

Sorry Kristy. Miles will get better with the tubes. My niece went through the same problem and finally had the tubes placed in her ear. Hard on you too Kristy. More Patience. Better days are ahead.

I hope all goes well with your son’s ears. My son did not get tubes but suffered from ear infections too. I remember those sleepless nights almost 19 years ago. Time flies!!
I love Campbell’s tomato soup it is my favorite soup of all times! I have not eaten it in years though. I will give your recipe a shot. I eat Trader Joe;s low sodium creamy tomato soup and I do like it!

I just ate a bowl of your recipe! YUMMO! I was reading some other recipes and I just didn’t have 6 hours! I wanted it now! This will be a standby! Oh, and yes I dipped my grilled cheese in the soup too!
