The last couple of months we’ve been having themed meal nights, Mexican night and pizza night. It makes meal planning a lot easier as well as the grocery shopping. The other nights of the week I try to make something new. Taco night has consisted of a variety of tacos, taco salad, fajitas, Mexican rice bowls and loaded nachos.
For pizza night I had plans to get creative each week and try different pizza recipes, but after making this Margherita Pizza once we just keep going back to it week after week.
Margherita Pizza is one of my favorite foods and now that we’ve found a keeper of a recipe, we can’t get enough of it.
The sauce for the pizza is really easy to make and so much better than any store-bought pizza sauce I’ve ever used. If you like pizza, I recommend you stock up on crushed tomatoes!
I might be cheating a little and using a pre-made dough that we buy from a local pizza joint. It’s only two bucks and the best dough I’ve ever tasted so why not just buy it right? You can use a store bought dough or make your own–I have made the dough a couple of times and it was great too, so I’ve included the link to Jenna from Eat Live Run’s blog for her dough recipe. It’s really easy to make as well.
Easy Margherita PIzza

Ingredients
- 1 cup crushed tomatoes
- 1 tbsp Extra virgin olive oil
- 1/4 tsp minced garlic
- Salt and pepper
- 1/2 cup fresh basil leaves, chopped or sliced thin
- 2 to 2 1/2 cups shredded mozzarella cheese
- 2 large tomatoes, sliced thin
Instructions
- 1 Store bought pizza dough or 1/2 of THIS pizza dough recipe (Jenna’s pizza dough is my favorite home-made so far!) **I just learned some bakeries sell their french bread dough, which works well as a pizza dough so can’t wait to try that).
- Instructions
- Preheat oven to 500.
- In a food processor, combine tomatoes, olive oil, garlic, salt and pepper to taste, and process until smooth.
- Roll out dough into a rectangular shape on lightly floured surface.
- Place dough on a lightly greased cookie sheet and continue to roll and press out to edges (and up the sides if possible) of cookie sheet.
- Cover dough evenly with pizza sauce. Top with mozzarella cheese, sliced tomatoes, and basil.
- Sprinkle with salt and pepper.
- Bake on lowest oven rack in a 500 degree oven for 12 minutes or until crust is golden and cheese is bubbly.
