I’m trying to create variety in our meals without just eating grilled chicken and veggies every night. That is hard. And kinda boring. So this faux fried rice is a win for both of us. It tastes and looks just like the real stuff. And I love the real stuff.
You can customize the “rice” to your taste buds and add your favorite veggies and meats. In mine, I added broccoli and carrots and some diced ham. You can add whatever you want to it though: asparagus, snap peas, peppers, and what about some bacon?
Eat up!

This is a really creative recipe! The picture really does resemble fried rice—I was trying to figure out what was “faux” about it!

Oh I’m glad Brett is eating healthy so I can get some more creative healthy recipes from you!!! THIS ONE IS AWESOME. I’ve heard of using cauliflower instead of potatoes, but never rice! Can’t wait to try it…but seems like a lot of work! Maybe I can talk Dan into making it for me…

Surprisingly great! Any suggestions for substitutes to decrease the oil to make it even healthier???
