I’m feeling sugar shocked already. I’ve over-indulged and eaten too much, and the Holiday parties, family feasts, and goody-plates-arriving-every-hour, haven’t even begun yet.
I need a detox.
Or just a healthy salad to eat for the next week. How about a Quinoa Salad?
Did you know Quinoa (pronounced kinwa- just in case like me, you’ve been saying it wrong and nobody has corrected you) is high in protein, contains a balanced set of amino acids, is an excellent source of dietary fiber and phosphorus, and is high in magnesium and iron? And it is also gluten-free. (Thank you Wikepedia).

So chew on that, and make this Mexican Quinoa Salad. It’s healthy, refreshing,and flavorful. I’ll be eating it for the next week until I can handle sugar again.
Mexican Quinoa Salad
Ingredients
3 c. water
1 1/2 c. quinoa
1/4 c. chopped cilantro
1 red bell pepper, chopped
5 green scallions, chopped
1 jalepeno, chopped
1 can black beans, drained
12 oz. frozen corn (I used one can white corn, drained)
juice of 3 limes
2 T EVOO
salt and pepper to taste
diced avacado for garnishing (optional)
Directions
In a medium pot bring water to a boil and stir in quinoa. Cook for 15-20 minutes until water is absorbed and quinoa is fluffy. Pour into a large bowl. Toss in all the chopped ingredients as well as the black beans and corn. Stir in the juice of limes and EVOO and season with salt and pepper. Let chill a few hours or overnight. Serve and garnish with fresh avacado.

What was your favorite workout routine this week?
I tried a new interval workout on the stair climber. Every 3-4 minutes (for 40 minutes) I ran on the stair climber for 1-2 minute intervals. It was akward. The machine shook like crazy, made really loud noises, and I drew an embarrassing amount of attention to myself. Worth it? Yes. Such a good workout.

I recently discovered quinoa and all of its glory too. I have quickly fallen in love with it. These quinoa burgers are delicious – highly, highly recommend them.
