I am completely over the treadmill. I’m losing my mind AND motivation on that thing. Next week, I’m running the Ragnar Relay Del Sol in Arizona. I can only hope my treadmill training will cut it. And I’m hoping to return to warmer Utah weather. We’ve had a few teasers of nice days this week that got my hopes up. Brett and I even went for a run Tuesday evening outside. But the next night, a snow and wind storm hit and our power was out for hours. Can’t it just be over? Like permanently over.
On another note, I am completely obsessed with avocados. I could eat them on anything and sometimes just eat them by the slices.
My latest lunch obsession is avocado toast (served with a side of broccoli).
Avocados are high in monounsaturated fats, the good kind of fat. The kind that actually reduces our cholesterol level. We can even save ourselves a few calories by replacing mayo or butter with a little mashed avocado.
I feel completely good about my avocado obsession. Now, if I could just get over the treadmill blues. I have a feeling we’ll need to be friends a little bit longer.

Sometimes the treadmill is the only way I can run (during football season) and I hate it too. It’s so much better running outside. Good luck on your race. What a fun adventure…

This is so funny, I have been on a huge avocado kick lately and I seriously just spoon it onto toast and smear it around…it is soooo good. Parm on top would just be amazing!

I’ve never thought of making an avacado like this. I love parmesan cheese and this looks really delicious!
I am headed to the gym now to get on the treadmill and hoping that it warms up enough soon so I can get outside and not freeze.

Brazilian Avocado Butter:
1 large avocado
1-2 cloves of garlic, smashed
1 tbsp honey
salt & pepper.
