Today is my little guy’s 2nd birthday! Before we get to partying I wanted to share this simple and elegant Grape and Goat Cheese Bruschetta.
Before you raise any eyebrows, let me just tell you how wonderfully grapes and goat cheese compliment each other. Especially when warm, and the goat cheese just kind of melts in your mouth, with the sweet crunch of the grapes–over a toasty little baguette. Ooh, and topped with a drizzle of balsamic vinegar! Heaven I tell you.
I usually try to have dinner ready when Brett gets home from work–because he turns into The Hunger Beast. He’s absolutely famished! And if dinner’s not ready he is raiding my pantry. I was running late with dinner the other night so figured I’d at least try to have a light appetizer to keep him from eating all of Owen’s fruit snacks and an entire bag of beef jerky.
I happened to buy goat cheese, grapes, and a whole wheat baguette earlier this week without any intentions of pairing the three. But the idea came to me I went with it in hopes of calming The Beast.
It worked, and he ate like ten. And then I did a little googling to learn this isn’t a new creation to the world of food. It’s actually quite common.
You don’t have to be absolutely starving to like these, I loved them too! I think they’d be a perfect appetizer for a party or shower, or even brunch. They’re cute and quite elegant if you ask me. Guess it’s one for the guys too.
And now I’m off to party with my naughty sweet little big TWO year old! We have a doughnut date!
Grape and Goat Cheese Bruschetta
Ingredients
12 slices (1/2″ thick) whole wheat baguette
1 cup of chopped grapes
2/3 cup goat cheese crumbles
Extra Virgin Olive Oil
Balsamic Vinegar
Instructions
Turn oven to broil.
In a medium bowl light toss together chopped grapes and goat cheese crumbles. Set aside.
Place baguette slices on a baking sheet and broil in the oven for 30-45 seconds. Remove from oven and turn slices over. Lightly brush the tops of the baguette slices with Extra Virgin Olive Oil.
Place a small spoonful of the grape and goat cheese mixture on top of each baguette slice.
Broil in the oven for about 3-4 minutes. Remove and drizzle with Balsamic Vinegar.

These sound so yummy! I once had grapes and goat cheese together in a salad and immediately fell in love. What a combo!

I made the frosting to use on a yellow cake (my husband’s favorite birthday cake combination is yellow cake with caramel frosting–7 years in I am still working to find the right recipes for both). I followed the other reviewers’ suggestions to double the caramel. The flavor was fantastic and intense. My husband liked it but thought it was super rich. I may lighten up some of the dairy ingredients next time. The icing was still fairly loose after chilling. I bet this would be amazing with the pumpkin cake.
