Grilled Chicken Cordon Bleu Sandwiches
After putting Owen to bed the other night, I went outside and sat on our balcony to read for a little bit. I could hardly focus on my book because our neighbors were out grilling and that “BBQ smell” overcame me (you know that smell, right?). That smell not only makes me hungry (even if I’ve already eaten) but it makes me so excited for all the Spring and Summer festivities warm weather offers–like barbecues! I decided then it was time to start using our grill (even if it is just a little indoor/outdoor George Foreman…still waiting for an upgrade hun! wink wink).
Hiding under that drippy, melty piece of Swiss cheese is a piece of grilled chicken. I had a salad ready to share with you today but these Grilled Chicken Cordon Bleu Sandwiches were last night’s dinner, and they were so flipping good I couldn’t wait to post them.
I was really excited to make these, but my husband didn’t seem to share my enthusiasm when I told him what we were having for dinner. Until he saw this baby on his plate in front of him. Then, he simply said “Oh wow! let’s pray!”
And I didn’t hear much else from him after that until his two sandwiches were gone. Silence is a good sign of a good meal!
Grilled Chicken Cordon Blue Sandwiches
Ingredients
2 large boneless, skinless chicken breasts
4 whole wheat hamburger buns
4 slices Swiss cheese
4 slices deli ham
a dab of butter
Mustard or BBQ sauce
Instructions
Pound out chicken to even out the thickness. Cut each breast in half to make smaller pieces that will fit on a bun.
**the chicken breasts I used were enormous, so I actually only used one breast, fillet it, and then cut those two pieces in half to make four smaller pieces.
Lightly butter the insides of each hamburger bun and set aside.
Season chicken with salt and pepper before placing on a heated grill. Grill chicken, flipping once, until cooked through.
Lay a slice of Swiss cheese on each piece of chicken. Quickly toss the sliced ham on the grill and flip once or twice to give it some grill marks and get it nice and hot. Then place a slice of ham on top of the Swiss cheese.
Place the buns on the grill, buttered side down and grill for a minute or two.
Remove and assemble the chicken on the buns to make sandwiches, topping with some lettuce and/or mustard or BBQ sauce. (I personally like BBQ sauce, Brett liked mustard!)
